Sushi Rolls With Dynamite Sauce

Dynamite Sauce: Mix two parts mayonnaise with one part Sriracha chili sauce and a small amount of capelin roe (fish eggs; masago) for texture.
Make sushi rice and mix with seasoned rice vinegar. 3 cups uncooked rice would need about 8 tablespoons of seasoned vinegar. Seasoned rice vinegar contains sugar and salt. Cut nori sheet in half. Spread rice on nori. Turn sheet over on to a plastic wrap covered sushi mat. Put sushi filling (inoki mushrooms, seaweed, shrimp) in middle of nori sheet. Roll. Spread on roe. Sprinkle black sesame seeds on top. Dab sauce on top. Cut!
