Red Snapper with Jicama and Mint Cilantro Dressing

Salad Ingredients
1 jicama, thinly julienned
1 cup snow peas, thinly julienned
1 carrot, thinly julienned
1/2 red onion, thinly sliced
Mint Cilantro Dressing Ingredients
1 handful of cilantro
1 handful fresh mint leaves
2 green onions
1/2 of a serrano peppers
1 tablespoon honey
juice from a lime
1/2 cup canola oil
Put all the ingredients for the dressing in a blender and blend until smooth. If you need more liquid for it to blend properly, add a little water. Mix the salad with the dressing and season with salt and pepper.
Sear the red snapper in a pan on high heat with a little oil. Put some of the mint cilantro dressing on the snapper.
