Sea Rocket is Finally Composting!

Composting food waste to return nutrients to the soil so we can have more local food to serve at Sea Rocket makes a lot of sense and we've been trying to do it since we opened in June 2008. But composting, like most things, has been a bit of an adventure!
First, Rachel Borgatti loaned us a huge rotating plastic composting bin that we put behind the restaurant. After flipping it one evening and the lid coming off (in addition to the smell and the flies), I gave up and called Paul over at the City College garden to help take my mess away. Next, Carol Morse at the TLC garden picked up our compost greens for awhile until she recently put us in touch with Mindy Swanson who is much closer by. Mindy will pick up 5 gallon buckets of our kitchen scraps each week and take them to Birney Elementary School just 2.5 miles away where she runs a school garden.

We can use more greens up here in the Laj too!

It's amazing to see plants growing and producing food
while where I live in Coeur d'Alene, Idaho, there
is a foot of snow on the ground.
