Pear Chocolate Tart

Ingredients
Dough
1 stick butter (1/2 cup)
1 1/3 cups flour
1 eggs plus 1 yolk
1/2 cup + 1 T sugar
1 cup unsweetened cocoa powder
Filling
3 1/2 ounces bittersweet baking chocolate (or chips)
1/2 stick butter (1/4 cup)
3 eggs
1/2 cup minus 1 T sugar
Berry jam
3 pears
Preparation
Pre-heat oven to 350 degrees
Dough
Place flour, softened butter, egg and yolk, sugar and cocoa powder into bowl and mix well.
Wrap in plastic and place in refrigerator.
Filling
In double boiler, melt chocolate and butter, mix well, and set aside to cool.
Beat egg whites until stiff.
Beat egg yolks and sugar together until foamy.
Fold egg whites and melted chocolate into yolk/sugar mixture until even.
Peel, core, and cut pears into small chunks.
Assembly
Line tart pan with dough.
Spread a thin layer of jam over dough and poke holes with fork across surface.
Place a layer of pears into tart pan(s).
Pour filling mixture over pears
Bake at 350 degrees for about 40 minutes. Set aside to cool.
Presentation
Serve warm with ice cream and/or strawberries, mint and powdered sugar per the photo below.
