Daily Cleaning Schedule

These tasks are to be performed every day, mainly by the dishwasher on schedule, though everyone will be expected to help out as needed.
Before Service
- Sweep and mop all FOH floors.
- Wash dishes and restock to their appropriate places.
- Help prep cook clean up the BOH in preparation for service.
During Service
- Wash dishes
- Help kitchen staff when requested
After Service
- Empty trash cans and take boxes to dumpster.
- Finish cleaning and restocking dishes. Wipe down sinks, dishwasher, and ice machine.
- Hose off rubber mats (from dish pit, cooking line, and bar) and clean kitchen floor. Replace mats.
- Clean both restrooms- toilet top and seat, sink basins, rims and faucets. Wipe down paper towel holders and soap dispensers. Clean/dust restroom mirrors as needed. Sanitize door handles on both sides of doors. Restock toilet paper: if less than 5 backup rolls, restock to 10; if 5 rolls or more, leave as is.
