Blood Orange Soda

Ingredients
**Allow 3-5 days for each batch of soda to be ready for consumption.
For a 1-gallon quantity of soda, which will fill 10 12oz bottles:
The juice of enough blood oranges to make 3/4 of a gallon (96oz)
3 cups water
3/4 cup honey
1/4 t brewer's yeast
Preparation
Mix all ingredients into large container and stir until honey and yeast are dissolved.
Allow to sit at room temperature for 24 hours.
Bottle, label with name & date, then allow to sit at room temperature another 24 hours.
Refrigerate for another 24 hours minimum.
Test a bottle to ensure enough carbonation.
If soda is not fizzy enough, remove bottles from refrigerator and allow to sit at room temperature for another 12-24 hours or as needed. Refrigerate again before serving.
Presentation
Bring unopened soda bottle and 12 oz glass with a small amount of ice to table.
Garnish glass with 1 slice blood orange and mint sprig.
Place glass on table and open soda in front of guest.
Pour 3/4 of the glass full and place bottle on the table.
