Brainstorm!

I've been brainstorming about the restaurant concept and here are some possible bolts of lightening mixed with various dust and debris.
Much of my experience with food over the past few years has been about learning how to make foods from scratch (finding recipes and learning the cooking techniques), learning about the raw ingredients and finding them in stores (for example, cilantro is the same thing as coriander, what the coriander seed looks like, and what it smells like when it is ground in to a powder; growing a cilantro plant on my balcony; seeing if they sell it at local farmers markets), and sharing it with friends by throwing a party based on food and cooking.
Here are some ideas for a restaurant concept.
- The kitchen is visible from the street and dinning area. You can see how your food is prepared.
- Explanations of recipes and ingredients communicated to the guests if desired on website, on printed materials in the restaurants, by the fact that the kitchen is visible, and through the staff (not quite a cooking class, but close for those who are looking for that; Wikipedia of restaurants)
- Ingredient kits and recipes for sale so you can make the same food at home
- Key menu items made from scratch in the restaurant; from scratch means that as much of the production of the food made from the raw ingredients as possible, i.e., almonds instead of almond paste.
- Items not made in the restaurant are made by local businesses when possible .
- Quality ingredients instead of industrial ingredients
- Very welcoming, comfortable, fun, and warm restaurant atmosphere. Not large and cold. More wood than concrete. Lower ceilings. Environmental impact though out in design of restaurant.
- Environmental operational procedures (recycling, composting if possible, etc.)
- Professionally run, operating procedures that are efficient and precise, documentation of procedures, staff training, etc.

- Scratch
- Dinner Party [name excludes breakfast and lunch... don't want one of those names you constantly have to explain why it's not accurate]
- Cooking Class [but were are not a cooking class... would be confusing]
- Sage Bistro
- Sage
- Celebrate Cooking [too hard to say 10 times fast]
- names with "Kitchen" in them
- tagline: The Kitchen is Our Playground
- Earth Bistro
Here are some ideas about how to get the word about about the restaurant.
- restaurant postcards with stamps on table so you can tell your friends about us
- website and blog
- personally visit every business in PB and La Jolla to introduce myself and the restaurant
- doorhangers
- numerous educational and special events at the restaurant
